Why our Wagyu beef is so special
It is all in the marble. Wagyu beef is highly marbled, meaning it has more visible layers of intramuscular fat. Due to the unique genetics of the cow, the meat has a higher percentage of fatty acids than ordinary beef which gives it a higher marbling score. The higher the marbling score, the more tender, juicy, and flavorful the meat.
Yes, it is higher in fat…and that is a good thing. Modern nutritional standards prove that the right fats, in moderation, are both beneficial and essential to a healthy diet. Wagyu, having a higher percentage of both omega-3 and omega-6 fatty acids and more monounsaturated fats than other beef, has the right fats. The soft fat has a low melting point which preserves that wonderful texture while holding most of the flavor.
